Hulled millet is an ancient grain that can be used as a substitute for rice or quinoa in a side dish or grain bowl base. It's super nutritious and gaining in popularity because of its high protein, fiber, and antioxidant contents.
Hulled millet is easy to cook:
- add 1 part hulled millet to 3 parts water or stock and bring to the boil.
- Simmer, covered for 20-25 minutes, until soft but still separate.
- Drain well and fluff with a fork.
